A Large food or beverage establishment must file IRS Form 8027. Large establishments are all of the following:
     1.   Food or Beverage is consumed on premises
     2.   Tipping is customary
     3.   More than 10 employees who work more than 80 man-hours , were normally employed on a typical
           business day during the preceding calendar year.

A return is NOT required for:
     1.   Business operated for less than one month on any calendar year.
     2.   Fast food restaurants and operations where tipping is not customary, such as cafeterias or operations
             where 95% of the total sales are carryout sales with a service charge.

Tipped employees must report their cash or credit card tips to their employer. IRS Form 4070 is required to be filed by
the 10th day of the month for the preceding month in which tips were received. Cash tips are done on the honor system
and can cause the employer the headaches of non compliance.
